Default Anyone know a good recipe for pickeral?

One thing I'm considering is seasoning it with some salt and pepper, then sauteeing it in butter with some dill and minced shallot. Hit it with some lemon juice before it comes out of the pan.

    There's also the standard fry-up.

Anyone else know a good way to prepare this fish?

aunt Jemima pancake mix.. make batter.. dip.. fry... heaven! hands down my fave thing to do with pickeral. Other honorable mentions white wine, sage, red onion and garlic en papilotte or ginger, soy, garlic, onion - simmer covered till fish is done and use pan sauce over rice

you forgot the egg before breadcrumbs to make them stick good.. breadcrumbs always do better when egg dip is done first

I would read the egg wash in to what he wrote anyways. It was probably meant to be assumed.

Panko crumbs are awesome for frying. Saltine cracker crumbs work really well too.

S&P pan fried, skin side down, finished in the oven with a sauce vierge, whichis olive oil, lemon juice, tomato, basil. It's also nice with some good olives or capers.

if its fresh you dont need much other than s & p, little dill and lemon juice etc

i woudln't batter it unless it frozen fish - seems like kind of a waste imo
